The paellero (summer kitchen) that enchants: Valencian tradition and flavor

Introduction
In Valencia, buying a house is not always decided just by square meters, location, or price. Sometimes, a small cultural detail can make all the difference: the paellero on the terrace or in the garden.
More than just bricks, the paellero is the heart of Valencian social life, where cooking is done patiently, shared with family and friends, and becomes a moment of connection and tradition. For many, preparing a good paella is almost an art, and doing it with time and love is the key to unforgettable flavor.
And let's not forget: Valencia is the birthplace of paella, and in our region, you can enjoy incredible, authentic paellas full of history.
In this post, we tell you its history, its importance in the home, and share the authentic paella recipe, including the essential socarrát, that toasted layer of rice at the bottom that makes each paella unique.
Origin of paella
- Paella was born in the Valencian fields in the 18th century, as food for farmers and rice field workers.- It was cooked over an open fire, in the garden itself, using local, seasonal ingredients.
- Among them, Valencian tomato, along with green beans, garrofó, and rabbit or chicken depending on availability.
- Sweet paprika was also used in the sofrito, adding color, aroma, and depth of flavor.
- Originally, it was a simple and nutritious meal, shared among family members and coworkers.
- Over time, paella moved into the home and onto the terrace paellero, becoming a symbol of life, tradition, and gatherings.
The paellero: a detail that enchants buyers
The paellero is a traditional space, built from refractory brick or stone, with room for wood or gas.- Cultural function: it allows paella to be cooked outdoors, bringing family and friends together.
- Versatility: if someone is not interested in making paellas, the paellero is also ideal for barbecues, enjoying the Mediterranean climate and outdoor life with friends and family.
Real story: a paellero that brings families together
A large family from Valencia was looking for a villa in the outskirts of Valencia after tragically losing the multi-generational family home during the DANA storm of October 2024.
Part of the family — grandfather, grandmother, two daughters, and two granddaughters — attended viewings showing that the important thing was not the square meters or the price, but finding a home where they could gather on weekends, long weekends, and summer months.
That fateful year, they couldn’t gather at Christmas due to lack of space and had to split up, so the desire to share moments together again was stronger than ever.
The granddaughters spoke with excitement and joy about wanting their grandfather to make his paella again, for them incomparable to any other, and that the whole family could once again enjoy meals and outdoor gatherings, recovering the tradition and family warmth they had lost. Fortunately we found the perfect house for that lovely family and we were invited to enjoy the first paella in their new home. The granddaughters hand't exaggerated; that paella of their grandfather was truly delicious!
This example shows how a detail like a paellero is not just a space to cook: it is a place of connection, tradition, and memories, which can become the heart of a home.
The authentic Valencian paella recipe
Ingredients (for 4 people):
- 400 g short-grain rice- 800 ml water or chicken broth
- 200 g chicken, cut into pieces
- 150 g rabbit (optional)
- 100 g flat green beans
- 100 g garrofó (typical white bean)
- 2 ripe tomatoes, grated
- 1 teaspoon sweet or semi-sweet paprika
- Saffron threads or coloring
- Olive oil, salt, and rosemary
Step-by-step preparation:
- Sauté the chicken and rabbit in the paellero until golden and juices are released.- Remove the meat and leave the oil and resulting juices in the paellero.
- Sauté the vegetables and grated tomato in that flavored oil, adding the paprika at the end of the sofrito so it does not burn.
- Reincorporate the meat into the sofrito.
- Add the rice and cover with hot broth.
- Season with salt (and taste the broth), saffron, and rosemary. Cook 10 min on medium-high heat and 10 min on low heat (do not stir).
- To achieve the socarrát, leave the paella for a few minutes (always without stirring) on low heat until the bottom is slightly browned and forms the typical crispy layer.
- Let rest for 5 min and serve directly from the paellero.
Cultural notes for foreigners:
· Authentic Valencian paella does not include garlic (though some add a clove to the sofrito), chorizo, seafood, peas, or red pepper strips.· Traditional ingredients: chicken, rabbit, vegetables, rice, a good chicken broth, Valencian tomato, paprika, and rosemary.
· The socarrát is the essence of a good paella: that crispy touch that makes it unique.
· Preparing paella with time and love is key: each step shows in the final flavor.
· The paella is placed in the center of the table for everyone to eat from, originally with a wooden spoon, although if preferred, the waiter can also serve it on plates.
· For many, preparing paella is almost an art, combining technique, patience, and care.
Varieties and uses of the paellero
The paellero is not limited to the classic Valencian paella: it is also ideal for cooking other types of regional rice dishes, including:
- Seafood paella- Arroz a banda
- Black rice
- Vegetable paella
- Lobster rice
- Mushroom rice
Additionally, the paellero is perfect for the “torrà”, the Valencian tradition of grilling various meats and sausages (chorizo, blood sausage, pancetta, pork cheek) and vegetables. Equivalent to a barbecue or grill, the torrà is a social event that requires wood or charcoal embers, a grill, and good company. It is an outdoor gastronomic plan, ideal for enjoying the Mediterranean climate and sharing moments with family and friends.
To achieve the best flavor for the rice, in Valencia it is traditionally recommended to use orange tree wood on the embers, which gives a unique aroma and taste that no other type of wood can achieve.
Thanks to its versatility, the paellero becomes a space where you can enjoy authentic Valencian cuisine, from paellas and various rice dishes to torràs and sausages, all outdoors and with unparalleled flavor.
